A new team for your gastronomic experience

It is with great enthusiasm that the Hôtel announces to its distinguished clientele a major change in its services with its partnership with the owners of the well-renowned restaurant Le Saint-Amour who will be managing all of the hotel's food and beverage operations.

This new highly successful team is taking over, since January 15th 2012, the leadership of the main dining room La Table du Manoir, catering services for meetings and conventions and room service operations. They will also have the opportunity to showcase their talent in the new restaurant Chez Boulay- bistro boreal that will be opening in April 2012 in what used to be the Resto bistro St-James which will cease its operations definitely on December 31st 2011.

We are convinced that this new partnership will enable our guests to live an exceptional gastronomic experience while at the hotel either in Quebec city for business or pleasure. Meeting planners should be particularly excited by this announcement since it could give them an opportunity to improve significantly the chances of success for their next event in Quebec city.

Highly renowned chefs Jean-Luc Boulay and his new complice Arnaud Marchand are the two of the new stars that are shining in Hotel Manoir Victoria since January 15th 2012. Biographies to follow.

La Table du Manoir


Québec was always renowned for its exceptionally fine dining and we proudly upholds this tradition while offering you an outstanding culinary experience at "La Table du Manoir".

Chez Boulay - bistro boreal


Chez Boulay-bistro boreal will be located in the hotel as an integral part of the hotel's services and with direct access on lively Saint-Jean St. This new restaurant, which is scheduled to open in April 2012, will enable world-renowned Chef Jean-Luc Boulay and his new associate Arnaud Marchand to offer to a large public a Nordic-inspired bistro cuisine that will feature regional products and will be adapted to the different seasons. More specifically, it will be a healthy and tasty cuisine where sous-vide and cocotte-style presentation will be in the spotlight.

As a reminder, Mr Arnaud Marchand was one of the two finalists in the 2010 summer edition of Radio Canada Les Chefs TV series during which Chef Jean-Luc Boulay, acting as a permanent judge,was able to see and appreciate his potential. The Hotel Manoir Victoria owner has chosen the famed design firm Lemay Michaud to create the decor and the layout of this new 120 seat restaurant that will require an investment of 750,000$.

ATTENTION: The Resto Bistro Saint-James has ceased definitely its operations on December 31 ,2011. Opening of Chez Boulay-bistro boréal is scheduled for April 1st ,2012.
